I am so incredibly excited to announce that I will have a new series on my blog starting today. Every Friday I will post something for what I like to call WOWE aka Work Out With Emmie. This series is to help motivate others as well as myself. I will be sharing healthy recipes, affordable places to get workout clothes, and other things that fall into the category of getting healthy. If there is anything you would like to see from this series please let me know. I am trying to expand the list of ideas I have. The recipe I am sharing today is one that I have adapted to my own likings from one of my favorite fitness youtubers Whitney Simmons.

Healthy Enchiladas

Ingredients
  • 1/2 lb of ground chicken or turkey (completely optional)
  • 1/4 of an onion
  • 1 zucchini (cut into small pieces)
  • 1 cup of tomato sauce
  • 1 cup of enchilada sauce (red)
  • Tortillas (I use flour)
  • Shredded cheese of your choice
  • Optional seasoning

Okay so I usually use ground chicken, but you can easily swap out the meat for tofu or even go meatless. I would substitute the meat for another veggie like bell peppers. I have made definitely tweaked the recipe over time because I figured out what I liked and didn’t like so yeah.

You will need to preheat your oven to about 375 to 400 depending on how impatient you are because let’s be real we all get hangry. You will also need a frying pan because you will cook the meat/veggies ahead of time.

You will add the chicken/turkey to the frying pan first so you can let that cook while you cut the veggies. I tend to cut my veggies pretty thin so it’s really all up to you what you want to do. Once the meat is cooked a little bit I tend to add the veggies in so they can cook with the meat for a while.

This is where the recipe kind of takes a turn of it’s own because of what I like. You have to pour the tomato sauce and the enchilada sauce into the frying pan once the veggies have soften a little bit. I tend to add a little bit of chili powder because I feel like it can taste a little bit bland without it. You can honestly add whatever seasonings you want to here or go without seasoning. I am a gal who loves seasoning.

Okay so once everything is nice and hot you will need to start making the enchiladas. You simply put a little bit of cheese down (optional) and then add the concoction from the frying pan. You close them up and place them in a pan that will go in the oven. I pour some of the enchilada sauce on the top with a little bit of cheese before I shove them in the oven.

I usually end up with 6-7 enchiladas which is great for meal prepping if you are into that. They really don’t take that long to make. It takes me about 50 mins to do everything. I like  them to be a little crispy on the outside so they stay in the oven for 15-20 mins.
